Easy Mini Apple Pies

This post is long overdue. I was supposed to post it on Easter Sunday but got a little distracted with the holiday, going on vacation over spring break, and my son getting surgery to remove his tonsils. He is home recovering and is such a little trooper. 

We had a very mellow Easter at home this year. It was a rather lazy but relaxing day for us. I cooked up an easy breakfast of bacon and mini apple pies. I always keep pre-made dough like crescent rolls and pie crust around. I just happened to have a can of apple pie filling in the pantry. These are easy and the possibilities are endless. I can't wait for marionberry season so I can make them into mini pies! Anyways, here is how you make these simple mini pies.

Ingredients: 

Pillsbury Pie Dough (or other store brand)
1 can Apple Pie Filling 
1 tablespoons sugar
1 tablespoon melted butter 

Directions: 

1. Preheat oven to 375 degrees. While oven heats open can of apple pie filling. Add 1 teaspoon cinnamon and 1 teaspoon sugar to filling in small bowl. Mix and set aside.

2. Roll out pre-made pie crust. I have a calzone cutter that I use to cut out perfect circular dough but you can use a pizza roller or knife and cut the dough into squares if you don't have a calzone cutter on hand. Add a spoonful of filling to center of the dough and pinch together edges. Place on greased cookie sheet.

3. Melt 1 teaspoon butter and dust over the dough. Sprinkle lightly with cinnamon and sugar. Bake for 15-20 minutes. The outside of the dough will be a nice golden brown. Let cool for 5-10 minutes.

I have also made mini cherry pies which were so delicious. I may experiment and make these with dark chocolate and marshmallow fluff. What do you think? Leave a comment if you think I should try it.
