Butterscotch Vanilla Lava Cake

My husband wanted something sweet for dessert and kept hinting about the chocolate lava cake I made last Sunday for Valentine's Day. Instead of chocolate overload, he want something different and suggested I make a lava cake with butterscotch. He loves butterscotch almost as much as I love chocolate! He suggested I make it with a vanilla cake and vanilla pudding so I did. I will warn you that this cake looks ugly but is incredibly delicious and rich. I have linked the original recipe that I found on Pinterest here. I just substituted the chocolate for vanilla. Both are equally delicious. Here is the recipe to my husbands Butterscotch Vanilla Lava Cake.

Ingredients:

Vanilla cake mix 
1 1/4 cups milk 
3 eggs
1 teaspoon vanilla extract 
1/2 cup coconut oil (or canola oil)

Instant vanilla pudding mix (serving size 4)
2 cups milk 
1 bag butterscotch chips 

Directions:

1. Mix together cake mix, 3 eggs, 1 teaspoon vanilla extract, coconut oil, and 1 1/4 cups milk until smooth. Spray crock pot with Pam or other cooking spray and pour cake mixture into crackpot. 

2. Mix together pudding mix and 2 cups of milk until blended and pour on top of the cake mix. 

3. Pour bag of butterscotch chips on top and cook on high for 2 and 1/2 hours. The top layer will be sponge-like and the bottom layer will be nice and gooey. 


Enjoy, this cake is yummy but really, really ugly. I promise it's good. Serve it with vanilla ice cream.
