Chocolate Dipped Chewy Candy Cane Sugar Cookies

One of my favorite holiday cookies to make are sugar cookies. Three years ago when my second son was a wee little newborn we didn't have a lot of money to go out and buy gifts for every single family member. I started looking through Pinterest and online for easy cookie recipes so that I could make edible gifts for our loved ones. I ended up finding lots and lots of yummy cookie recipes but ended up giving my Grandma a call instead for her chewy sugar cookie recipe. She made them a lot for us growing up and they are so yummy! 

I ended up adding crushed peppermint candy canes and dipped them in chocolate. They are amazing! I make them every year now. Their is something about that chocolate and peppermint combo that goes perfect together. 

Chewy Sugar Cookie Recipe - 

Ingredients: 

2 3/4 cups flour 
1 teaspoon baking soda
1/2 teaspoon of salt 
1 1/4 cup butter
2 cups sugar
2 eggs
2 teaspoons vanilla extract 
1/2 cup crushed candy canes (about 7)
1 bag semi sweet chocolate chips 

Directions:

1. Preheat oven to 350 degrees. Unwrap candy canes (about seven) and toss into a food processor or blender; set aside. 

2. In a bowl stir together flour, baking soda, and salt; set aside.

3. In a large bowl, cream together butter and 2 cups sugar until light and fluffy. Beat in eggs one at a time. Add vanilla extract.

4. Gradually stir in dry ingredients and crushed candy canes until it's just blended. 

5. Roll dough into walnut sized balls and flatten slightly with a fork or your palm. Place on greased cookie sheet.

6. Bake for 8-11 minutes until edges are a light golden brown. Let cool. 

7. While cookies cool prep the chocolate. In a microwave safe bowl melt half a bag of chocolate chips for 1 minute. Stir until chocolate is smooth and creamy. 

8. Dip half the cookie in the chocolate mixture and place on parchment paper. Add crushed candy canes or sprinkles for decoration. Repeat until all cookies are done and let sit until chocolate hardens.

These cookies are the bomb-dot-com. They are soft, chewy, sweet and chocolatey! I promise you will love them. Enjoy!
